How many coats should be put on the nail to be sure of no breakage?

I went today to get the 'acrylic' taken off for the 'real' gel nails. It's very natural yes but my nails are still kind of soft, they are not hard like i need them to be. I keep my hands in water, I'm thinking about going back so they can give me more coats.How many coats should be put on the nail to be sure of no breakage?
